An Academy on the grounds of the Old and New Midleton Distilleries who opened their doors in February 2013.
Since then the Irish Whiskey Academy has become the dedicated whiskey institute of Irish Distillers Pernod Ricard. Here lies the focus on the production and the beautiful Irish Whiskey, produced at Midleton.
Everyone is welcome to attend any course, everyone who is eager to learn more about whiskey. No matter if you are a whiskey expert or a whiskey newbie, there is always something to learn and to follow for everyone; every course has it’s charm.

The great tutor, International Whiskey Ambassador David McCabe will teach you all the facets of Irish Whiskey. I’ll give you a small glimpse into the Enthousiast Package of the academy.
I can tell you that It’s rather a fantastic experience to discover by you! So if you have an opportunity to join in the future, if it is the 2 hour or the 2 days experience, you will be flabbergasted! That I’ll guarantee.
On the 1st day (we) the students, joined lessons about, raw materials, brewing, fermentation and maturations. During the lessons there will be a very interesting visit to the Brewhouse and the Stillhouse where we’ve met Brian Nation. Don’t forget about the tastings. Ohhh .. the lovely tastings. My taste buds didn’t know what hit them!
On the early morning of the 2nd day we were intrigued by the masterly skills of Master Cooper Ger Buckley. I’ve been looking at him with huge eyes, at least that is how it felt. This man is a fantastic teller and oh my, he is really the Master Cooper.
A well earned break with some Tea or coffee accompanied by mini scones. And moving on with the lessons where we left off on the 1st day. Mostly about grain distillation. Between the lessons, we went to visit Warehouse 42. Here we were going to nose and taste some fabulous samples straight from the cask. With no one else then with Master of Maturation Kevin O’Gorman. I was amazed that there are a total of 45 warehouses with 1.2 million casks. And the … blending class. Spread out in three groups we were going to blend our own whiskey, being very creative and yes! My group has blended the ‘Ish.
In the 2 day package you will be staying at a well earned 5* hotel, The Castlemartyr Hotel. You can expect a hosted evening in one of Midleton’s premium restaurants, Ballymaloe.
On both days you get a delightful and fully catered sumptuous lunch.
After these 2 days, you will go home with a few extra pounds. And with a personalised bottle of Irish whiskey and Certificate of Attendance. It is worth it! Truly delicious!
