During the day, The Drinks Lab team help others create innovative craft drinks. At night, they turn their attention to developing their own. After 4 years, they are releasing these spirit experiments in small batches, with the first likely to cause some controversy amongst whisky enthusiasts.
Monday 29th March 2021, Glasgow. Scotland. Established in 2017, “The Start-Up Drinks Lab” was founded by entrepreneurs Hannah Fisher and Craig Strachan to provide an innovation facility for those wanting to launch drink brands.
The Echlinville Distillery (County Down, Northern Ireland) has unveiled its highly anticipated award winning Dunville’s VR 18 Year Old Port Mourant Rum Finish Single Malt Irish Whiskey.
This cask strength (57% abv) limited release is from the first of eight incredibly rare casks from the lost Port Mourant Estate Distillery in Guyana – casks that previously nurtured an exceptional 41 year old Demerara Rum from the world’s last surviving double wooden pot still.
Rhum Clément, something completely different from whisky. Another adventure for my taste-buds in the world or Rhum.
On their website they mention the following; Since 1887, the production of Rhum Clément has been carried out according to the purest traditions and most time-honoured inherited from Homère and Charles Clément. Homère Clément, physician and mayor of Le François, purchased the prestigious 43 hectare sugar plantation, Domaine de L’Acajou, and pioneered Rhum Agricole, a contemporary style of pure rum made directly from fresh free-run sugarcane juice, instead of the traditional rum made from molasses.
That sounds interesting enough! Rum or should I say Rhum, we go!
Another tweet tasting and this time we savored a range of premium and super-premium releases of The Irishman and Writers’ Tears from Walsh Whiskey.
Writers’ Tears is a unique style of whiskey embedded in Irish History, at a time when Irish Whiskey was distilled in copper pots, two styles flourished : Malt and Pot Still, distilled from 100% barley. The Irishman is the Walsh family’s original whiskey and represents the rebirth of the traditional family owned provincial whiskey distilling that thrived during the last golden age of Irish Whiskey at the end of the 1800’s.
Again, another direction when it comes to spirits, making a curve to rum. Four special rums send to join an on-line tasting with a couple of others. I was looking forward to this tasting, but unfortunately, I had the date all wrong, so I tried the rum a couple of days later by myself. Nevertheless, it was an amazing experience and the rum is really stunning, just like the labels on the big bottles.
Monday, October 12. A large group of enthusiasts were looking forward to this rum tasting, held online for a long time. Wrapped in a fabulous black box, 4 samples of rum were waiting to be opened, Mount Gay Black Barrel, Mount Gay XO, 1703 Master Select 2016, and a preview of the 2017 release of the 1703 Master Select.
When looking at the line-up, no wonder we all looked forward to this evening.
This range had been named after a good looking man Bill McCoy. He was a legendary Prohibition-era smuggler. Bill McCoy used to build yachts at the start of the 20th Century. He was very good at it, but the economy took a bad turn and he had to diversify.
He didn’t really agree with prohibition and in January of 1920, he started rumrunning. He must have been very good at that too, as soon he became public enemy number 1. And he never even broke the law, as he anchored his boat in international waters!
Rum, another adventure, a new challenge. Curious as I am, I looked up the meaning of the name La Hechicera. This is Spanish for ‘enchantress’ and pronounced as ‘etch-ee-seh-rah’. Try that a few times before and after a couple of glasses filled with rum when the magic kicks in.
Using the solera method of ageing in American white oak barrels, La Hechicera is a wonderful blend of mature rums between 12 and 21 years.
This captures the character, exuberance and diversity of Columbia.
